    Alligator River Baked Potatoes

    Scrub and clean the outside of regular baking potatoes. Being careful to not cut all the way through, slice each potato into 6-8" sections down the length of the potato. Insert a wedge of onion and a pad of butter into each slit. Sprinkle salt, pepper and dried parsley to taste over the butter and onion areas. Wrap each potato in aluminum foil, place on a baking sheet and bake them in the oven as you would regular baked potatoes for an hour or longer, depending up the size of your potatoes. Serve piping hot. Enjoy!

    Well I wasn't sure what to expect from the title but these sound absolutely delicious! I've never thought to bake them this way. I bet you could even add some bell pepper slices too.

    OK, this sounds like a great idea, but I don't understand where the name comes from. Is this something that can also be baked on the grill? That would make for a great travelling recipe!

    I agree! I am thinking that these must look similar to normal baked potatoes, only with a piece of onion in between. Sometimes we just forget how good "simple" food is!
